Honey's composition varies with plants on which the bees forage. Almost all natural honey, on the other hand, contains flavonoids (such as apigenin, pinocembrin, kaempferol, quercetin, galangin, chrysin, and hesperetin), phenolic acids (such as ellagic, caffeic, p-coumaric, and ferulic acids), ascorbic acid, tocopherols, catalase (CAT), superoxide dismutase. The majority of these compounds work synergistically to generate an antioxidant effect.
