Ammonium carbonate [(NH4)2CO3] is a white crystalline salt, and is also popular as baker’s ammonia or hartshorn. It is soluble in water, and decomposes in hot water. Upon heating, it breaks down into gaseous ammonia, carbon dioxide, and water vapour. Ammonium carbonate is used as a leavening agent in flat, baked goods such as lebkuchen, cookies and flat biscuits or crackers. However, it is not suitable for use in cakes as the gaseous ammonia is unable to escape the thick cake batter, leaving a foul smell. Used as a food additive, ammonium carbonate functions as an acidity regulator and a raising agent. Ammonium carbonate is an inorganic herbicide, fungicide and microbiocide. Examples of pests controlled include bacterial blight, eyespot, leaf spot, powdery mildew, and net blotch. Applications include walnuts, cereals (such as wheat and barley), tomatoes, fruit (such as cherries, apples, and bananas), and wood structures. As a fungicide, it is a protectant, inhibiting fungal spores and pathogens from entering the host tissues.

Ammonium carbonate is used as the main ingredient in smelling salts. Smelling salts are stimulants that irritate an individual’s nasal and lung membranes if sniffed. In the past, smelling salts were used by medical practitioners to revive fainted individuals. However, these salts are used nowadays by athletes in order to boost athletic performance. Ammonium carbonate is also used to make other ammonium compounds, in smokeless tobacco products such as snuff, as an emetic, and in cough expectorants. Expectorants are used to treat symptoms related to infections of the respiratory tract, including common cold, bronchitis and pneumonia. These infections may lead to the accumulation of mucus in the throat and lungs. Cough and discomfort in the chest may also develop. Expectorants help in alleviating these symptoms by lubricating the airway, and in turn loosening up the mucus and thinning secretions in the airway. Thus, the mucus is easier to cough up, clearing the throat.

It has been used as a carminative and stomachic. It acts as a foaming agent for the manufacture of expanded material. Other applications of ammonium carbonate include cosmetics and personal care, fire extinguishers, textiles (mordant; dyeing), fermentation accelerator in the manufacture of wine, ceramics, washing wool, adhesives, sealant chemicals and organic chemicals. Ammonium carbonate is also used for analytical purposes in the chemical industry.
