India plays a central role as the leading manufacturer of onion powder, accounting for nearly 25% of global onion production. However, bad weather conditions during 2023 and early 2024 disrupted onion yields in the country, temporarily affecting powder production due to limited raw material availability. During Q1 2025, onion powder prices stabilised after the volatility of the previous quarter. This stability was achieved through improved raw onion supplies, particularly from India's robust harvest, which lowered input costs for processors.

In the United States, while some speciality onion products suffered from supply shortcomings, the supply of onion powder and granulated varieties was adequate to cover demand, thus keeping prices relatively stable. Onions are among the most widely consumed vegetables globally, with their by-products such as onion powder experiencing strong demand in both developing and developed nations.
In India, which is a global exporter of onion powder, the prices have been quite unstable due to a mix of weather and policy changes. In the 2023–24 season, onion production dropped by about 15% because of bad weather. To keep prices in check within the country, the government banned onion exports until mid-March 2024. Although this ban was lifted in May, a 40% export duty was put in place, which added more pressure to the market. Since onion powder depends heavily on the availability of fresh onions, these changes had a direct impact on its pricing. Maharashtra has started setting up irradiation centres to help onions last longer and reduce spoilage and help balance prices. This is expected to lead to lower or more stable onion powder prices soon. Globally, onion powder prices are closely linked to India’s market trends since it has a large share in exports. The production drop and export restrictions in 2023–24 caused supply tightness in international markets, pushing prices up in regions like the Middle East, Southeast Asia, and parts of Europe.

These restrictions were intended to ensure domestic supply, but additionally have also interrupted global trade flows, resulting in reduced onion supplies in importing countries.

The major feedstock for onion powder manufacture is fresh onions. The white and yellow ones are the major ones, chosen for high solids content and pungency. The onions are then subjected to dehydration methods like air drying, freeze-drying, or vacuum-shelf drying to produce the final powder product. India has recovered from earlier supply shocks due to the onion harvest, alleviating input pressures for processors. Consequently, global supply chains are stabilising after being disrupted by export bans and weather-related crop shortfalls during 2023–24. Demand continues to be robust, especially in North America, Europe, and Southeast Asia, where onion powder is a standard commodity in packaged foods and spice mixes. The market, however, is sensitive to climatic uncertainty, logistical blockages, and policy changes in major exporting nations. Onion powder prices are expected to remain firm or ease modestly with steady growth in demand supporting the medium-term outlook.
