About Tequila

Tequila is a distilled spirit made primarily from the blue agave plant, predominantly produced in the region surrounding Jalisco, Mexico. Tequila first originated from the Aztecs, who fermented agave sap into pulque around 1000 B.C. The Spanish began distilling agave in the 16th century, creating tequila. In 1974, the Mexican government limited its production to specific regions in Mexico. It is now classified into several types based on aging: Blanco (unaged), Reposado (aged 2-12 months), Anejo (aged 1-3 years), and Extra Anejo (aged over 3 years). Tequila is renowned for its unique flavours, which is why it is used in cocktails, particularly the margarita.

Properties of Tequila

Tequila is clear to light amber in colour, depending on ageing. Tequila typically has an alcohol content of 35-55% by volume. Nutritionally, it is low in calories (about 64-97 calories per shot) and contains no carbohydrates or sugars, making it a lower-calorie option compared to other spirits. Additionally, tequila is gluten-free and made without animal products, appealing to various dietary preferences.

Manufacturing Process of Tequila

The production of tequila involves several key steps. First, agave plants are harvested, and the pinas (the heart of the plant) are removed and transported to the distillery. Next, these pinas are cooked to convert complex carbohydrates into fermentable sugars, a process that can be done using traditional ovens (hornos), autoclaves, or diffusers. After cooking, the pinas are milled to extract the agave juices.

The extracted juice is then fermented with yeast in wooden, cement, or stainless steel tanks, producing alcohol. This fermented juice undergoes distillation, typically in stainless steel or copper pot stills, to separate the alcohol from impurities. Next, the distilled spirit is aged in oak barrels for at least two months for Reposado, one year for Anejo, and three years for Extra Anejo. Finally, the tequila is blended, diluted to the desired alcohol content (usually between 35-55% ABV), filtered, and then bottled and labelled.

Additionally, the growth of e-commerce has made tequila more accessible, allowing consumers to purchase their favourite brands online, further boosting market expansion.
