It is made by spray-drying skimmed cow's milk slurries containing protein in the form of carbonated and/or rennet casein, mixed with palm oil. Over time, mozzarella production evolved to include cow's milk and lower-moisture variants better suited for transport and cooking, especially on pizzas.

Mozzarella cheese powder has a cream colour and can be easily reconstituted with water to produce mozzarella cheese. The powder has a long shelf life without refrigeration. Next, a lactic acid starter culture (0.04%) and calcium chloride (0.03%) are added to the milk to initiate coagulation and curd formation. The milk is allowed to ripen for 15 minutes before rennet (0.019%) is added, causing the curd to form over the next 20-25 minutes.

 

The curd is then cut into cubes and allowed to heal for 15 minutes before the cooking and stretching process begins. The curd is cooked at 45°C for 2 hours until the desired acidity level of 0.18-0.19% is reached. The whey is drained off and the curd is heated in hot water to temperatures of 70-80°C, at which point it is manually stretched and moulded.

 

After the stretching and moulding, the cheese is cooled in cold water at 4°C for 2 hours, then brined in a 23% salt solution for an additional 2 hours. Finally, the brined cheese is dried to produce the mozzarella cheese powder. The powder is then packaged in moisture-barrier containers and stored at low temperatures to preserve quality and shelf life.
