However, an estimated 90% of mahua flower production goes into brewing beverages rather than medicinal uses.
The manufacturing of mahua liquor begins with drying the ripe mahua flowers in the sun. The dried flowers are then fermented with water in HDPE drums for 72 hours, with a typical input of 956.88 kg/day of mahua flower and 4878.36 litres of water. After the fermentation process, the fermented liquid is distilled at 110°C in a copper still that is fired by rice husk in a water-cooled Bhatti (still). The condensation product of this distillation process is the raw country liquor. The raw mahua liquor is then mixed with water as per the guidelines of the Excise Department. The mixed liquor is sampled by the Excise Officer for chemical examination. If the liquor is found fit for human consumption, it is distributed to authorised retail counters in earmarked poly packs prepared on-site.

The process of making liquor from mahua flowers (Madhuca longifolia) involves several steps, such as:
1. Collection of Mahua Flowers
The first step in the process is the collection of mahua flowers. These flowers are rich in sugars, making them ideal for fermentation. The flowers are collected from the tree and are then dried to reduce moisture content, which helps in better preservation.
2. Fermentation
Fermentation is the process where sugars present in mahua flowers are converted into alcohol and carbon dioxide by the action of yeast. The dried flowers are soaked in water to extract the sugars, and yeast is added to initiate the fermentation process.
Chemical Reaction: C6H12O6 (glucose) → 2C2H5OH (ethanol) + 2CO2 (carbon dioxide)
3. Distillation
After fermentation, the liquid mixture, known as the mash, contains alcohol along with water and other impurities. Distillation is used to separate alcohol from the mash. The fermented mash is heated in a distillation apparatus, and alcohol is collected as it evaporates at a lower temperature compared to water.
The principle of distillation relies on the difference in boiling points of alcohol (78.37°C) and water (100°C). The distilled alcohol is then collected and can be further refined.
4. Ageing
The distilled liquor is often aged in wooden barrels to enhance its flavour. During the ageing process, various chemical reactions take place, contributing to the development of complex flavours. Compounds such as esters, aldehydes, and acids are formed during this period.
Some of the chemical reactions involved here are:
1) Formation of esters:
C2H5OH (ethanol) + CH3COOH (acetic acid) → CH3COOC2H5 (ethyl acetate) + H2O (water)
2) Oxidation of alcohols to aldehydes:
C2H5OH (ethanol) + O2 (oxygen) → CH3CHO (acetaldehyde) + H2O (water)
