About Liquor from Mahua Flower

Mahua liquor is a traditional sweetened liquor made from the flowers of the Mahua tree, which is found largely in the central, northern and southern Indian forests. It has a strong floral taste and aroma. Mahua liquor has been gaining recognition and attracting attention from wine enthusiasts and connoisseurs around the world. Efforts are being made to revive and promote Mahua, including seeking Geographical Indication (GI) status, which would protect its origin and quality. Experts believe Mahua has the potential to become Indian substitute of Mexican tequila.

Properties of Liquor from Mahua Flower

Mahua flowers are source of distilled liquor in India since the late 1800s. The liquor made from mahua is known for its sweet, floral aroma and taste, which comes from the high sugar content and aromatic compounds in the flowers. It typically has an alcohol content of 7-9%. The liquor is cream-coloured and has a viscous, oily texture. Mahua flowers are a rich source of vitamins, minerals, and antioxidants, and the liquor is believed to have medicinal properties, being used traditionally to treat conditions like bronchitis, rheumatism, and diabetes. However, an estimated 90% of mahua flower production goes into brewing beverages rather than medicinal uses.

Manufacturing Process of Liquor from Mahua Flower

The manufacturing of mahua liquor begins with drying the ripe mahua flowers in the sun. The dried flowers are then fermented with water in HDPE drums for 72 hours, with a typical input of 956.88 kg/day of mahua flower and 4878.36 litres of water. After the fermentation process, the fermented liquid is distilled at 110°C in a copper still that is fired by rice husk in a water-cooled Bhatti (still). The condensation product of this distillation process is the raw country liquor. The raw mahua liquor is then mixed with water as per the guidelines of the Excise Department. The mixed liquor is sampled by the Excise Officer for chemical examination. If the liquor is found fit for human consumption, it is distributed to authorised retail counters in earmarked poly packs prepared on-site.

Making of Liquor from Mahua Flower Plant

The process of making liquor from mahua flowers (Madhuca longifolia) involves several steps, such as:

1. Collection of Mahua Flowers

The first step in the process is the collection of mahua flowers. These flowers are rich in sugars, making them ideal for fermentation. The flowers are collected from the tree and are then dried to reduce moisture content, which helps in better preservation.

2. Fermentation

Fermentation is the process where sugars present in mahua flowers are converted into alcohol and carbon dioxide by the action of yeast. The dried flowers are soaked in water to extract the sugars, and yeast is added to initiate the fermentation process.

Chemical Reaction: C6H12O6 (glucose) → 2C2H5OH (ethanol) + 2CO2 (carbon dioxide)

3. Distillation

After fermentation, the liquid mixture, known as the mash, contains alcohol along with water and other impurities. Distillation is used to separate alcohol from the mash. The fermented mash is heated in a distillation apparatus, and alcohol is collected as it evaporates at a lower temperature compared to water.

The principle of distillation relies on the difference in boiling points of alcohol (78.37°C) and water (100°C). The distilled alcohol is then collected and can be further refined.

4. Ageing

The distilled liquor is often aged in wooden barrels to enhance its flavour. During the ageing process, various chemical reactions take place, contributing to the development of complex flavours. Compounds such as esters, aldehydes, and acids are formed during this period.

Some of the chemical reactions involved here are:

1)    Formation of esters:

C2H5OH (ethanol) + CH3COOH (acetic acid) → CH3COOC2H5 (ethyl acetate) + H2O (water)

2)    Oxidation of alcohols to aldehydes:

C2H5OH (ethanol) + O2 (oxygen) → CH3CHO (acetaldehyde) + H2O (water)

Each step is crucial to ensure the quality of the final product.

Applications and Drivers of Liquor from Mahua Flower

The mahua flower is a key ingredient in the production of a traditional Indian alcoholic drink. Mahua flowers and seeds have various medicinal and nutritional properties. The flowers are used to treat skin diseases, such as Eczema and are believed to have healing and curative properties for conditions like bronchitis, piles, rheumatism, arthritis, diabetes, bleeding gums, and more. The oil extracted from mahua seeds is used in soap manufacturing and as a cooking oil, while the seed cakes are used as a fertiliser.

Mahua is deeply rooted in the culture and traditions of indigenous tribal communities in India. The tree is considered sacred, with the flowers used in religious ceremonies. Historically, mahua liquor was used as a substitute for imported alcohol during the British Raj, leading to its ban and a decline in cultural significance. However, recent efforts by Indian government to revive and promote mahua liquor have propelled the market’s growth. In 2020, government of India launched a mahua-based alcoholic beverage called Mahua Nutribeverage, which comes in 6 fruity flavours and has a 5% alcohol content. The product was developed by IIT-Delhi in collaboration with Tribal Cooperative Marketing Development Federation of India.
