The purified gluconic acid is then neutralised with a base, such as sodium hydroxide or calcium carbonate, to form sodium gluconate or calcium gluconate. Finally, the gluconic acid or its salt is dried and packaged for commercial distribution.

Step 1: Enzymatic Oxidation of Glucose
Gluconic acid is produced by the oxidation of glucose using glucose oxidase enzyme.
Reaction: C6H12O6 + O2 + H2O → C6H12O7 + H2O2
In this reaction, glucose is oxidised to gluconic acid, and hydrogen peroxide is produced as a by-product.
Step 2: Catalytic Decomposition of Hydrogen Peroxide
The hydrogen peroxide produced in the first step can be decomposed catalytically to water and oxygen to prevent any inhibitory effects on the enzyme and to ensure the purity of the gluconic acid.

Step 3: Purification
The resulting gluconic acid solution is then purified. This may involve filtration, ion exchange, or other purification techniques to remove any impurities and by-products.
Step 4: Concentration and Drying
The purified gluconic acid solution is concentrated through evaporation. If a solid form is required, the solution is further dried to produce gluconic acid crystals or powder.
