About Cornstarch Syrup

Cornstarch syrup, also known as corn syrup, is a sweetener derived from the starch of corn. It is a versatile ingredient used in a variety of food products, including baked goods, candies, and sauces. Cornstarch syrup is valued for its ability to add sweetness, texture, and moisture to recipes. It is also commonly used as a thickening agent due to its starch content. While it is not as sweet as honey or table sugar, cornstarch syrup provides a unique flavour profile and is a useful alternative in certain culinary applications.

Properties of Cornstarch Syrup

Cornstarch syrup is a viscous syrup produced by hydrolysing cornstarch. It is a non-crystallising, clear or light-coloured syrup that is commonly used as a sweetener and thickening agent in food products. It has a high glucose content and is more reductive compared to fructose or maltose syrups. Additionally, it is less sweet than sucrose and has a neutral flavour.

Manufacturing Process of Cornstarch Syrup

The production process for corn starch syrup begins with the starch mixing stage, where the corn starch is adjusted to suitable conditions for liquefaction. High temperature liquefaction enzymes are added, and the starch is prepared for spray liquefaction. The Baume degree is maintained between 16-180 Be for maltose content above 50%, or 14-16 Be for maltose content above 70%. The pH is kept between 5.6-6.0, and the quality requirements ensure no mildew, agglomeration, dough, or dead ends, with the concentration within the specified range.

Next, the high temperature liquefaction stage fully contacts the adjusted starch milk with steam to rapidly heat it up, opening the starch chain and fully liquefying it. The liquefied enzyme is inactivated by high temperature and high pressure jet. The first injection temperature is maintained at 103 ± 5 ° C, with a laminar flow time of 50-90 minutes for maltose content above 50%, or 40-90 minutes for maltose content above 70%. The secondary injection temperature is kept between 125 ° C and 135 ° C. The pH value is maintained between 4.0-6.0, and the sugar solution (20%) conductivity is kept below 50 μs/cm.

The ion exchange and colour removal stage uses anion and cation resin to exchange and remove ions in the syrup liquid, adsorbing colour and macromolecules. The syrup liquid feed temperature is maintained below 45 ° C, with a flow rate of less than 4 m/h. The pH value is kept between 3.5-6.0, and the sugar solution (20%) conductivity is maintained below 50 μs/cm, ensuring a clear and transparent liquid.

Finally, the three-effect vacuum concentration stage maintains a certain degree of vacuum in the evaporation chamber to lower the boiling point. The vacuum degree is kept at one effect ≥ 0.02 Mpa, two effect ≥ 0.04 Mpa, and three effect ≥ 0.07 Mpa. The temperature is maintained at one effect ≥ 90 ° C, two effect ≥ 70 ° C, and three effect ≥ 50 ° C. The pH value is kept between 4.0-6.0, with solids above 70% or customer standards. The final product is a colourless, transparent, and viscous liquid cornstarch syrup with no odour.

Making of Corn Starch Syrup

1. Corn Starch Extraction

Process:

  • Corn kernels are cleaned and steeped in water with sulfur dioxide (SO2) to soften them.
  • The softened kernels are milled to separate the germ, fiber, and protein from the starch.

Chemical Reaction: Corn (C6H10O5)n + H2O + SO2 → Softened Corn

2. Liquefaction

Process:

  • The corn starch is mixed with water to create a slurry.
  • The slurry is heated and treated with alpha-amylase enzyme to break down the starch into shorter chains of glucose called dextrins.

Chemical Reaction: (C6H10O5)n + H2O (with α-amylase) → Dextrins

3. Saccharification

Process:

  • The dextrinized slurry is then treated with glucoamylase enzyme to convert dextrins into glucose.

Chemical Reaction: Dextrins (C6H10O5)m + H2O (with glucoamylase) → Glucose (C6H12O6)

4. Isomerization

Process:

  • The glucose solution is treated with glucose isomerase enzyme to convert glucose into a mixture of glucose and fructose, producing high-fructose corn syrup (HFCS).

Chemical Reactions: Glucose (C6H12O6) (with glucose isomerase) → Fructose (C6H12O6)

5. Refining

Process:

  • The syrup is refined through filtration and carbon treatment to remove impurities.
  • It is then concentrated to the desired level of sweetness.

Applications and Drivers of Cornstarch Syrup

Cornstarch syrup, also known as high-fructose corn syrup (HFCS), is a versatile sweetener widely used across various industries. Its primary applications include acting as a sweetener, moisture retainer, and texture enhancer in a range of products such as candies, soft drinks, jams, and baked goods. Additionally, it is used in the production of sauces, soups, bakery items, and confectionery products, enhancing their texture, shelf life, and consistency. The demand for cornstarch syrup is driven by the growing food and beverage industry, heightened demand for processed and convenience foods, the trend towards ready-to-eat meals and the expansion of the fast-food sector.
