Properties of Arabic Gum

Gum Arabic is a complex mixture of polysaccharides and glycoproteins obtained from the sap of Acacia trees. It is slightly acidic with a pH of 4.5-5.5 and has a glassy appearance. It is fully soluble in both hot and cold water, forming a viscous solution. Its density ranges from 1.35-1.49 and it has a high molecular weight of around 0.25x10^6.
